Each person develops their own personality and character as they go through life; this is what makes the person so special and unique. Since death is a certain fact that in most cases would cause grief and bereavement to the deceased's family, the existence and creation of eulogies is also certain.
Write down exactly what you want to say in your love poem, you may be able to find a poem written three hundred years ago that expresses your same sentiments. Poetry has been used by men and women for centuries to express feelings of love. Even if your poem won't win any literary prizes, the person you present it to will most likely treasure it as if it were composed by one of the great Romantic poets.
Read it out aloud when you are working on it, in that way you can really hear how it sounds and what need to be changed. Then I would add a new twist to the story depending on what would come to me at the time and what was going on in the person's life.
